We have unique names for things in T&T. We call avocados, zabocas. Other places call them alligator pears, probably because their skin is green and rough. Instead of alligators in Trinidad & Tobago, we have their close cousin, the caiman. Voila… Zabucaiman!

Scoop out the flesh of the avocado and mash it up. Add the Dairy Dairy, salt and black pepper and mix well. Scoop mixture back into avocado shell and place on plate. Cut carrots into triangles for the caiman’s teeth and place around the edge. Slice the cucumber thinly. Use 2 slices for the eyes, garnish with cut grapes or olives to create pupils. Layer the remainder of the cucumber slices behind the avocado to create the caiman’s body. Add carrot sticks for legs. Serve.
You can enjoy by using cucumber slices to scoop your dip or you can use crackers!
