Sweetbread Cookies

Ingredients

  • 1¾ cup flour
  • 2 tsps baking powder
  • ¼ cup butter
  • ½ cup raisins
  • ¼ cup cherries
  • ¼ tsp salt
  • 1 cup white sugar
  • 1 tsp nutmeg
  • 1 tsp ground cinnamon
  • ½ cup grated coconut
  • 1 egg
  • ¼ cup Dairy Dairy
  • 1 tsp vanilla essence

Directions

In a mixing bowl add flour and butter, cut butter into the flour. Add the remaining ingredients: salt, baking powder, sugar, spices, fruits and grated coconut. Mix thoroughly to combine.

Make a well in the centre of the dry ingredients and add the egg, Dairy Dairy and essence. Mix just until combined.

Divide batter into 18 cookies and bake in a preheated oven on 350F for 10 to 14 minutes.

Remove from the oven and allow to cool completely in a cooling rack.
