Coconut Barfi Cookies

We love barfi and we love cookies. So, of course, we jumped at the chance to blend two of our favourite desserts into one Dairy Dairy dish! And the extra boost of flavour and texture that the coconut brings sets these cookies apart; dig in!

 

Ingredients

  • ½ cup Dairy Dairy Full cream powder
  • ½ cup butter (softened)
  • ½ cup powdered sugar
  • 1 tbsp water
  • 1 cup all-purpose flour
  • ½ tsp coconut essence
  • ¼ tsp baking powder
  • ½ tsp ginger powder
  • ¼ tsp cardamom powder
  • ¼ cup desiccated coconut
  • A pinch of salt
  • ¼ cup white sugar
  • 6 maraschino cherries, halved

Directions

  • Preheat your oven to 350°F. Line a baking tray with parchment paper.
  • In a large mixing bowl, beat the softened butter and powdered sugar until light and fluffy.
  • Add the water and coconut essence followed by all of the remaining ingredients except for the ¼ cup of sugar. Mix until a soft dough forms.
  • Roll the dough into 10 to 12 small balls.
  • Coat each ball in sugar.
  • Place them on the prepared baking sheet top each one with half of a maraschino cherry.
  • Bake in the preheated oven for 10 to 12 minutes or until the edges are golden brown.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
