Yoghurt Chocolate Chip Muffins

Yield: 10 large muffins

Ingredients Needed

•           1 cup White Sugar

•           1 Egg (room temperature)

•           1 cup Yoghurt

•           ½ cup Vegetable Oil

•           2 heaped tbsp Dairy Dairy Low Fat Powdered Milk  + ½ cup Water (mixed)

•           1 tsp Vanilla Essence

•           2 cups All-Purpose Flour

•           1 tsp Baking Soda

•           ½ cup Cocoa Powder

•           1 cup Chocolate Chips

•           Preheat oven to 350º F.

•           Place 10 large muffin cups in muffin tray.

•           Whisk together sugar, egg, yoghurt, oil, Dairy Dairy Low Fat  Powdered Milk and vanilla essence.

•           Sift dry ingredients – flour, baking soda and cocoa powder.

•           Gently fold wet and dry ingredients, try not to over mix.

•           Fold in ¾ cup chocolate chips.

•           Place in muffin cups and top with remaining ¼ cup chocolate chips.

•           Bake for 20 minutes.
