Strawberry Ice Cream Treat

We all scream for ice cream! And this ice cream substitute is rich and creamy just like the real thing, with the added goodness of yogurt and Dairy Dairy.

Ingredients

  • 6 heaped tbsp Dairy Dairy
  • 2 cups water
  • 6 tbsp brown sugar
  • 2 tbsp corn flour
  • 10 oz cold strawberry yogurt
  • 2 oz crushed chocolate cookies
  • 2 oz multi-coloured sprinkles

Directions

  • In a medium sauce pan, add water, sugar and Dairy Dairy. Whisk until combined and place on medium heat. Once mixture starts to simmer, add corn flour and continue whisking. Increase heat and bring to boil, monitoring carefully to prevent burning.

  • Once boiling point is achieved, remove from stove and let cool completely.

  • When cool to the touch, add yogurt and whisk in to evenly. Place mixture into a clean, covered container and freeze for 5 hours until semi-solid.

  • Remove mixture, place into a food processor and pulse for a minute to break apart any ice crystals until smooth. Place mixture back in covered container and freeze overnight. When ready to serve, scoop out and add crushed chocolate cookies and sprinkles on top.

  • Yield: ¾ Litre
