My First Muffins

Bond with your little one as you put together this simple, fruit-filled muffin recipe. Think how great they’ll feel to have something that they baked for a snack at school!

 

Ingredients

  • 3 heaped tbsp Dairy Dairy Full Cream + 1 cup water (mixed)
  • 2 cups flour
  • 1 tsp baking powder
  • 2 tsp baking soda
  • ½ tsp salt
  • ¾ tsp nutmeg
  • 1 cup sugar
  • ½ cup finely chopped cherries
  • ¼ cup finely chopped almonds
  • 1 tsp almond essence
  • ½ cup vegetable oil
  • 1 cup mashed bananas
  • 2 eggs

Directions

  • Preheat oven to 350ºF.

  • In a large mixing bowl, sift flour, baking powder, baking soda, salt and nutmeg. Add sugar, almonds, cherries and mix evenly.

  • In a separate bowl, add mixed Dairy Dairy, essence, oil, mashed bananas and eggs. Whisk thoroughly to combine. Add the wet ingredients to the flour mixture and, using a spatula, mix until batter comes together.

  • Line muffin pans with paper cups and, using a spoon, fill each cup approximately ⅔ full with batter.

  • Place muffins in preheated oven and bake for 20 to 22 minutes or until a toothpick inserted into the muffins comes out clean. Serve warm.
