Homemade Chai

Nope, it’s not just a coffeehouse drink flavour ;). Chai has a long, legendary history in south-east Asia before it was adopted in Western coffeehouses. With this recipe, you can tweak it to suit your own favourite flavours and make enough for the whole family without spending money at your favourite drive-through daily!

 

Ingredients

  • ΒΌ cup Dairy Dairy Full Cream
  • 3 black tea bags
  • 3 cups water
  • 2 cinnamon sticks
  • 1 star anise
  • 6 – 10 cardamom pods
  • 2 dried bay leaves
  • 1 small piece of ginger, sliced
  • 3 tbsp sugar or sweeten to taste
  • 1 tsp ground cinnamon (for garnish)

Directions

  • Add cinnamon, star anise, bay leaves, cardamom and ginger to a saucepan and toast for 2 to 3 minutes.
  • Then add water and tea bags. Let it simmer for about 5 minutes to infuse the water.
  • Stir in the milk powder and sugar until fully dissolved.
  • Strain the chai latte into mugs to remove the spices, sprinkle cinnamon and enjoy hot. Or blend with ice to have it as a frappe!
