Cajun Fried Chicken

Cajun cuisine originated in Lousinana, USA, and shares many of the same influences as Trinbago Creole food: French techniques and flavour combinations favoured by the West African and Indigenous peoples enslaved here. This Cajun Fried Chicken recipe is more than moreish!

 

Ingredients

  • 1 ½ tbsps Dairy Dairy Skimmed Milk
  • 8 chicken wings
  • 1 tbsp Cajun seasoning
  • 3 tbsps hot sauce
  • 2 eggs
  • ½ cup water

Coating

  • 1 ½ cups flour
  • ½ cup cornstarch
  • 1 tbsp Cajun seasoning

Directions

  • In a bowl, mix together the Cajun seasoning, hot sauce, Dairy Dairy, eggs, and water to create a marinade.
  • Add the chicken wings to the marinade, ensuring they are evenly coated. Let them marinate for at least 1 to 2 hours, or refrigerate them overnight.
  • In another bowl, combine the flour, cornstarch, and Cajun seasoning to make the coating mixture.
  • Heat oil in a large pot to 350°F.
  • Remove the chicken wings from the marinade, allowing any excess liquid to drip off. Coat each chicken wing thoroughly in the flour mixture. Place the coated chicken wings into the hot oil and fry for about 6 to 8 minutes, or until they are golden brown and cooked through.
  • Once cooked, remove the chicken wings from the oil and place them on a plate lined with paper towels to drain any excess oil.
